3 INGREDIENT NO CHURN OLIVE OIL ICE CREAM

 

Three ingredients. No churning. This is as simple as it gets when it comes to making ice cream. But it’s good. Like… shockingly good. Of course it’ll never quite match the heights of anything made in an ice cream machine but if you don’t have the equipment or are short on time, it’s a beast of an alternative.

 

Ingredients:

approx. 500ml (1 pint if you're in the UK) double cream

1 x 397ml can of condensed milk

100ml Honest Toil extra virgin olive oil

 

In a stand mixer, whip the double cream and condensed milk until thick. This needs to go beyond whipped cream in terms of thickness – it should begin to look firm and cloyed – because the olive oil will thin it out. Pour in the olive oil in a steady stream, letting the cream mixture soak it up. Freeze until firm. 

This will come out the freezer much harder than regular ice cream, so give it a little time before scooping. Enjoy with a sprinkle of sea salt flakes and a drizzle of Honest Toil olive oil.
