How our oil matures with time

From bottling into the next year or so, our oil matures with time. What starts as vibrant, robust, and green grassy freshness will become earthy, smooth and buttery. Rest assured, our oil matures beautifully within its predefined shelf life, offering you the same quality and health benefits through this period.

New harvest oil: crisp, pungent and intensely bold

  • Soon after hitting the shelves, the fresh oil is on the intense side with an unpaired green colour of koroneiki olives.
  • It’s rich and mouth-coating: a peppery oil that grabs you right away and will leave you with a kick in every drop - a signature of high-quality, unfiltered olive oil.
  • Due to the presence of polyphenols, you'll taste a whiff of bitterness on the sides of your tongue. This flavour stays with the oil until the end of its lifespan.
  • When tasting our oil al fresco, you'll notice vegetal notes: fresh grass, peppery arugula, hearty artichoke, and crisp lettuce.
  • Enjoy the fragrance and the colour as a small pleasure, or even take as an antioxidant shot with a spoon.

Mature oil: complex, earthy flavour, well-rounded

  • One to one-and-a-half years upon harvest, our oil has a round, medium-bodied and complex character.
  • Still having that spicy kick (hello, polyphenols!), the flavour resolves into a lighter, buttery finish, like smooth, creamy avocado fruit or a hearty artichoke.
  • The herbaceous greenness turns into a round, golden hue as complexity sets. You may notice a hint of fruitiness.
  • Try the oil in itself, preferably from a wineglass, to understand how it works for your palate!
