Whipped tofu with miso miso

This is a special recipe that was sent to us by our friend Daniel at miso miso in Heidelberg/Berlin.
At miso miso, Mieko, Melina and Daniel create delicious miso pastes using only the best and freshest ingredients. We were super happy when they emailed us that they wanted to corporate our olive oil in a few of the dishes they prepared for the launch dinner of their new webshop.
It's always exciting to collaborate with like-minded makers - and Daniel was even kind enough to share this recipe with us, which they presented in this stunning format at the event. Go ahead and give it a try, it's so easy yet so nutritious and can be presented in such a fancy way! :)

This whipped tofu recipe surprises everyone, and is a perfect starting point if you don't really know what to do with tofu. It's child play to make yet you'll be amazed
at what you can create when the ingredients are right. We use natural tofu, a few lemon, chickpeas miso miso and lots of delicious olive oil - needless to say, the Honest Toil is a pretty essential element of the flavour profile. The miso miso, olive oil & lemon give the tofu an incredibly fresh and creamy consistency.
We have whipped tofu several times a week and we eat the protein-rich dip on a slice of sourdough bread, with baked vegetables, potatoes or in a bowl with salad and rice. Enjoy!

Ingredients (for 2 portions)
- 1 natural tofu (200 g)
- 2-4 tbsp honest toil olive oil
- 2 tbsp lemon juice
- 2 tsp chickpeas miso miso
- 1 pinch of salt
- a little bit of pepper
- some zest of a lemon
- optional: oat milk to make your whipped tofu creamier
- optional: spices, herbs to taste

Preparation:
1. crumble the tofu with your hands and place in a blender.
2. now add all the other ingredients and blend for a few minutes. if the mixture is too thick, help it along with a plunger or add a little oat milk.
3. place the finished whipped tofu on a plate and top with olive oil and herbs.
4. enjoy!
Goes well with:
- oven vegetables
- potatoes
- simply on good bread with olive oil
- as a dip in your bowl with salad & rice
